Watermelon Feta Salad with Mint

It’s still summer here in Beijing, and what better way to cool down than with watermelon AND mint WITH feta cheese!! 

It’s quite cheap too as feta cheese costs RMB35.00, half a watermelon around RMB 10.00 and the mint? It’s FREE (from our her garden! ok fine, maybe 10RMB for the pot but we’ve used mint for a LOT of recipes already).

Ingredients:

3 cups watermelon – seedless, chilled and cubed

1/2 lime

1/4 cup fresh mint leaves – chopped

1 cup feta cheese – cubed

1 tbsp olive oil

salt and pepper to taste

Procedure: 

1. For the dressing: In a small bow, mix the lime juice, salt and pepper and olive oil; set aside.

2. In a bigger bowl, mix the watermelons and mint and the dressing.

3. Throw in the feta cheese and carefully mix thoroughly with your hand. 

4. Serve on a plate and garnish with a sprig of mint.

5. Enjoy!

I just have to post our mint plant! Before our 3-week vacation to Philippines, we forgot to leave this pot to our friend to look after. We thought it must have wilted and died. But we came back to this! So happy!

Be careful of the watermelons as it gets crushed easily. Put as much feta cheese as you want.

The dressing: lime, little bit of olive oil, salt and pepper to taste.
